Texas Roadhouse served their first steak in Del Rio on March 25, 2024, and held their grand opening Dec. 9, 2025.

of this community and the dedication of our amazing team, we’ve not only grown — we’ve thrived.”*

Although Falcon’s Texas Roadhouse career started in Odessa 12 years ago, she said she’s come to love Del Rio.

“I really love the partnerships we’ve built here,” said Falcon. “We have partnerships with the school district, Veterans Day Parade, through sports teams, Border Bull Mania — we’ve really been able to get here and get involved in the community.”

“When we were getting started here, so many people rolled out the red carpet for us and helped us,” Falcon said. “So we’ve been able to partner with some really great people in town, and I’ve been super grateful for them. They’ve been awesome.”

While Falcon didn’t write a check to build the Veterans Blvd. steakhouse, the company deems her the owner and operator. “When it comes to running the Del Rio Texas Roadhouse, it’s all up to the local manager. We get to manage inside our four walls, obviously, within the guardrails,” she said.

Falcon has 12 years of experience with the company, starting out as a hostess in Odessa and moving through every element of the restaurant, from bartending to running the kitchen.

The national chain, founded in 1993 in Clarksville, Indiana, has grown to more than 700 locations known for hand-cut steaks, made-from-scratch sides and a community-focused culture.

However, Falcon said while Texas Roadhouse gave her the run of the restaurant, there is one thing that doesn’t change.

“The legendary food and service stay the same at all of our restaurants,” she said.
